How to make Kombucha?
For 1l of Kombucha you need:
1. Quality glass with a lid.
2. 4g/3tsp (2 tea bags) black or green tea.
3. 50g of sugar.
4. 100 ml Kombucha starter or Kombucha SCOBY with liquid.

Prepare tea. Use green, black or mixture of both teas. Cool it down and add sugar. Pour tea (and water) into the fermentation jar. Cool down to room temperature.

2.
Add kombucha starter and/or SCOBY with some liquid to the tea. (Always use at least 10% of the starter/kombucha tea for every new batch of kombucha).

3.
Ferment 7-10 days or less if you make jun kombucha. Taste during fermentation to find the right taste of kombucha.

4.
Take out the SCOBY and save 10% of liquid for the new batch.

5.
Kombucha is ready to drink. You can also store it in bottles or make continuous fermentation.
What is Scoby?
โSCOBYโ is an acronym that stands for Symbiotic Culture Of Bacteria and Yeast. This living culture forms a gelatinous, pancake-like layer at the interface where the liquid meets the air. It plays a vital role in the fermentation process of kombucha, a popular fermented tea beverage.

After the first fermentation, add flavor to your kombucha. During the secondary fermentation, SCOBY disc should be removed. To make kombucha at home, you’ll need tea, sugar, a SCOBY, and / or a starter liquid (previously brewed kombucha). Brew the tea, dissolve the sugar, let it cool, then add the starter liquid and SCOBY. Ferment for 7โ14 days, tasting along the way, until it reaches your desired flavor.

- 2 bags of tea (2 tsp tea leaves)
- 50g sugar
- 900 ml water
